Fried Eggplant & Onions

Ingredients

2 large Eggplants, cut into 1" cubes
1 large onion, cubed
Olive oil
Salt and pepper

Procedure

In a heavy frying pan, heat up the olive oil taking care it does not smoke . Add onions and fry until softened; add in eggplant cubes and cook until browned and tender. Turn out onto serving bowl lined with a paper towel and season with salt and pepper.
