Middle Eastern Pasta & Vegetables

This is an easy and delicious meal that feeds a lot of people. I like to make this for picnics or for church gatherings. 

Ingredients

1 pound of cooked Pasta- your favorite choice
Cherry tomatoes, cut in half
1-2 Courgettes (zucchini), cubed
Red and green peppers, sliced very thinly
1 onion, cut up
1/4 cup olive oil
1 tsp sea salt
1/4 tsp fresh ground pepper

Few shakes of McCormick's Chicken Seasoning or Steak Seasoning
1-2 cloves garlic, minced (optional)
1/4 cup parsley, minced

Feta Cheese (optional)

Procedure


Saute courgettes, peppers, onions in olive oil; season with spices. Add minced garlic and cherry tomatoes and saute for a couple of minutes. 

To Serve

Turn this out onto the drained pasta on a serving platter and toss lightly. Drizzle with more olive oil, and adjust the salt and pepper seasoning. Toss in broken up feta cheese very gently. Sprinkle with parsley. Garnish with cherry tomatoes and other colorful vegetables.
