Carol's Holiday Spinach Dip


This was a favorite dip of my children for the holidays. It is adapted from the familiar Knorr Spinach dip made with the package. I prefer the fresh veggies finely chopped and the tanginess of using my homemade yogurt cream cheese instead of sour cream.This dip will not last long!

Ingredients

1 pkg (10 oz) frozen Spinach
1 cup mayonnaise
1 cup lebane (yogurt cream cheese) or sour cream (9% fat)
1 tblsp apple cider vinegar

3 radishes, diced very fine
3-4 green onions, chopped very fine
roasted red peppers, chopped fine
1 celery stalk, chopped very fine
1 tblsp McCormick's Chicken Seasoning
1/2 tsp sea salt, to taste
1/2 tsp fresh ground pepper
dash hot sauce

Procedure

Defrost frozen spinach; squeeze the excess water from the spinach and set aside. Whisk together lebane, mayonnaise, vinegar, and seasonings. Add the spinach and finely chopped vegetables and mix well with a fork. Refrigerate until ready to serve.
