Because I was cooking gluten free for many years, I was always on the lookout for recipes without a crust. Here is one I came up with for a good quiche. It is a delicious way to get your greens.
Ingredients
1 cup fresh mushrooms, sliced1/2 onion, chopped fine
1/2 head of garlic, roasted in the oven in olive oil
Olive oil
Greens (spinach, mustard, other), chopped fine
6 sun-dried tomatoes, chopped very fine
1 tsp salt
1/2 tsp fresh ground pepper
1 cup Half n' Half
4 eggs
1/2 cup Feta cheese
1 cup grated cheese (your choice)
Thin slices of red peppers
Nutmeg
Preheat oven to 425 degrees Fahrenheit. Saute the mushrooms, onions, and add the roasted garlic in frying pan at the last minute. Add seasonsings and greens, stirring for a couple of minutes until the greens are wilted.
Whisk the eggs and half n'Half. Add the cooled ingredients from the frying pan to the cream cheese mixture in a large mixing bowl. Pour all of this into a greased baking dish. Bake quiche for 15 minutes and then turn down oven to 350 degrees for 45 minutes or until it is set in the center.
