Roasted Red Potato Fries with Garlic & Rosemary

I love spring new potatoes! They are delicious any way you cook them: roasted, steamed, baked, sliced and fried...yum! Below is a great recipe I adapted and use often.


Ingredients

12-15 small new potatoes (enough for your company), sliced into fries
1/4 cup olive oil
2-4 cloves of garlic, minced very fine
2-3 tablespoons of minced fresh Rosemary
coarse sea salt
Fresh ground pepper
2 tblsp parsley, chopped fine

Procedure

Preheat oven to 350 degrees.


Slice the pototoes and place them in a large serving bowl; coat well with olive oil. Add the Rosemary, minced garlic, salt and pepper and stir. Pour the red potato fries into large baking dish.


Stir the potatoes a couple of times during baking, and bake for about 1 hour, or until fork-tender and nicely browned.

To Serve

Toss the potato fries with parsley and sprinkle with parsley, coarse salt and fresh ground pepper. Serve as an accompaniment with your evening meal.
